Asparagus Guacamole recipe
Ingredients:
1 lb of fresh asparagus, cut, trimmed.
1 garlic clove, minced.
2 teaspoons of lime juice.
¼ cup of canned green chilis, chopped.
½ teaspoon of salt.
½ teaspoon of cumin.
2 tablespoons of onion, finely chopped.
Directions:
Cook asparagus in small amount of water until tender.
Drain well and cool thoroughly.
In a blender or food processor, process the asparagus, garlic, lime juice, chilis, salt and cumin until smooth, scraping the bowl frequently.
Remove from food processor bowl and stir in the chopped onion.
Chill.
Serve with tortilla chips.
